Toffee and Caramel Mallow Cookies

These decadent cookies feature a delicious combination of rich toffee, gooey caramel, and toasted mini marshmallows. Ideal for satisfying your sweet tooth

Ingredients:

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup toffee bits
  • 1 cup caramel bits
  • 1 1/2 cups mini marshmallows

Instructions:

Preheat the oven to 350F 175C

Line baking sheets with parchment paper

In a large bowl, cream together the softened butter, granulated sugar, brown sugar, and vanilla extract until light and fluffy

Beat in the eggs, one at a time, ensuring each is fully incorporated

In a separate bowl, whisk together the flour, baking soda, and salt

Gradually add the dry ingredients to the wet ingredients, mixing until just combined

Fold in the toffee bits and caramel bits

Drop rounded tablespoons of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart

Bake in the preheated oven for 8 minutes

Then, quickly remove the baking sheets from the oven and gently press a few mini marshmallows onto the top of each cookie

Return the baking sheets to the oven and continue baking for an additional 2-4 minutes, or until the cookies are golden brown and the marshmallows are lightly toasted

Remove from the oven and allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely
