Boozy RumChata Chocolate Pudding
Ingredients:
- 1/2 cup sugar
- 1/4 cup unsweetened cocoa powder
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
- 2 cups milk
- 1/4 cup RumChata liqueur
- 1/2 cup semisweet chocolate chips
- 1 teaspoon vanilla extract
- Whipped cream for topping
- Chocolate shavings for garnish
Instructions:
In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt
Gradually add milk while whisking constantly to avoid lumps
Place the saucepan over medium heat and cook, stirring continuously until the mixture thickens and comes to a boil
This should take about 5-7 minutes
Remove the saucepan from heat and stir in the RumChata liqueur, semisweet chocolate chips, and vanilla extract until the chocolate is melted and the mixture is smooth
Pour the pudding into serving dishes or glasses
Cover each dish with plastic wrap, ensuring the wrap touches the surface of the pudding to prevent a skin from forming
Refrigerate for at least 2 hours to set
Before serving, top with whipped cream and garnish with chocolate shavings
