Keto Coconut Flour Pancakes
Fluffy and delicious pancakes made with coconut flour, perfect for a keto-friendly breakfast.
Ingredients:
- 4 eggs
- 1/4 cup coconut flour
- 1/4 cup unsweetened almond milk
- 2 tbsp coconut oil, melted
- 1 tsp baking powder
- 1/2 tsp vanilla extract
- Stevia or sweetener of choice to taste optional
- Butter or coconut oil for cooking
Instructions:
Use a whisk to mix the eggs, almond milk, melted coconut oil, and vanilla extract in a bowl
Mix in the baking powder and coconut flour with a whisk until the mixture is smooth
Add the sweetener and mix it well
Put the pan on medium heat and grease it with coconut oil or butter
To make pancakes, pour batter onto the pan
Once the top starts to bubble, flip it over and cook until its golden brown
Do again with the rest of the batter
Keep warm and top with your favorite things
