Apple Crisp Cookie Cups
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 large apples, peeled, cored, and diced
- 1/4 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup old-fashioned oats
- 1/4 cup chopped walnuts optional
- Whipped cream or vanilla ice cream, for serving
Instructions:
Warm the oven up to 350F 175C and grease a mini muffin tin
To make the dough, put the flour, sugar, vanilla extract, and salt in a bowl and mix them together until they stick together
Cut the dough into 24 equal pieces, and press one piece into each of the mini muffin tins cups to make small cups
Put the apple pieces, brown sugar, cinnamon, and nutmeg in a different bowl
Put some of the apple mix into each cookie cup
Sprinkle the oats and chopped walnuts over the apple-filled cups
Mix the oats and walnuts together in the same bowl
After the oven is hot, bake the cookies for 15 to 18 minutes, or until they are golden and the apples are soft
Take the cookie cups out of the oven and let them cool in the pan for a few minutes
Then, carefully move them to a wire rack to cool all the way through
Ice cream or whipped cream should be put on top of the apple crisp cookie cups
