Classic Vanilla Bean Creme Brulee Parfait
Ingredients:
- 4 egg yolks
- 1/2 cup granulated sugar
- 2 cups heavy cream
- 1 vanilla bean, split and seeds scraped
- 1/4 teaspoon salt
- 2 tablespoons brown sugar for caramelizing
Instructions:
Warm the oven up to 325F 163C
Whisk the egg yolks and sugar together in a bowl until they are well mixed
Pour heavy cream, vanilla bean seeds, and salt into a saucepan
Place it over medium-low heat and stir it around a few times
Take it off the heat
Slowly pour the hot cream mixture into the egg yolk mixture while whisking all the time to keep the eggs from curdling
Use a fine-mesh sieve to pour the custard into a bowl or jug
To serve, pour the custard into glasses or jars
Fill a baking dish with hot water until it comes halfway up the sides of the glasses
Then put the glasses in the dish
Put it in the oven and bake for 40 to 45 minutes, or until the custard is set but still has a little give in the middle
Take them out of the oven and let them cool down
Put it in the fridge for at least two hours or overnight
Just before you serve, put a thin layer of brown sugar on top of each custard
With a kitchen torch, turn the sugar into a caramel that forms a crunchy crust
You can enjoy your Classic Vanilla Bean Creme Brulee Parfait either warm or cold
