Lans Macarons
Ingredients:
- 2 cups almond flour
- 2 cups powdered sugar
- 1 cup egg whites about 7-8 eggs
- 1 1/4 cups granulated sugar
- 1 teaspoon vanilla extract
- Food coloring optional
- Pinch of salt
Instructions:
Prepare a baking sheet with parchment paper or a macaron mat
In a food processor, combine almond flour and powdered sugar
Pulse until well combined and fine in texture
Sift the almond flour mixture through a fine-mesh sieve into a large mixing bowl
Discard any larger pieces that remain
In a separate bowl, beat egg whites and salt until foamy
Gradually add granulated sugar while continuing to beat
Beat until stiff glossy peaks form
Add vanilla extract and food coloring if desired to the egg white mixture
Gently fold until combined
Gradually fold the sifted almond flour mixture into the egg white mixture
The batter should be smooth and glossy, with a lava-like consistency
Transfer the batter into a piping bag fitted with a round tip
Pipe small circles onto the prepared baking sheet, spacing them slightly apart
Tap the baking sheet gently on the counter to release any air bubbles
Let the macarons rest for about 20-30 minutes until a skin forms on the surface
Preheat the oven to 300F 150C
Bake the macarons in the preheated oven for 15-18 minutes, or until the macarons have risen and the tops are set
Remove from the oven and let the macarons cool completely on the baking sheet
Once the macarons are completely cool, gently remove them from the baking sheet
Pair up macaron shells of similar size

, buttercream, ganache
Pipe a small amount of filling onto the flat side of one shell and sandwich with another shell
Place the filled macarons in an airtight container and refrigerate for 24 hours to allow flavors to meld
Bring the macarons to room temperature before serving
