Twice Smoked Cheesy Potatoes

Savor the delicious flavor of these twice-smoked cheesy potatoes, which are stuffed with bacon, cheddar, sour cream, and green onions. These potatoes, which are expertly seasoned and smoked, serve as a tasty side dish for any barbecue or get-together.

Ingredients:

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 4 slices cooked and crumbled bacon
  • Salt and pepper to taste
  • Wood chips for smoking

Instructions:

Set the temperature of your smoker to 225F 107C

After cleaning and drying, make fork pricks in the potatoes

After placing the potatoes squarely on the smoker rack, smoke them for two hours while seasoning them with wood chips

After taking the potatoes out of the smoker, allow them to cool a little

Scoop out the insides into a bowl after cutting the potatoes in half lengthwise, leaving a thin layer of potato on the skins

Scoop out potatoes, mash, and add crumbled bacon, green onions, sour cream, and cheddar cheese

Add salt and pepper to taste and season the mixture

Place the cheesy filling inside the potato skins

Put the stuffed potatoes back in the smoker and let them smoke for a further half hour, or until the cheese is bubbling and melted

Enjoy while hot
