Caramelized Red Onion Goat Cheese Quiche

Enjoy this Caramelized Red Onion Goat Cheese Quiche, which is full of tasty flavors. In a flaky pie crust, caramelized onions and creamy goat cheese go very well together. Its a classy and filling dish for lunch or brunch.

Ingredients:

  • 1 pie crust
  • 2 red onions, thinly sliced
  • 2 tablespoons butter
  • 4 eggs
  • 1 cup heavy cream
  • 6 ounces goat cheese, crumbled
  • Salt and pepper to taste
  • Fresh thyme leaves for garnish

Instructions:

Preheat the oven to 350F 175C

In a skillet, melt the butter over medium heat

Add the sliced red onions and saut until caramelized, about 15 minutes

Season with salt and pepper

Set aside

In a mixing bowl, whisk together the eggs and heavy cream

Season with a pinch of salt and pepper

Place the pie crust in a pie dish and prick the bottom with a fork

Spread the caramelized onions evenly over the crust

Pour the egg and cream mixture over the onions

Sprinkle the crumbled goat cheese on top

Bake in the preheated oven for 35-40 minutes or until the quiche is set and lightly golden brown on top

Remove from the oven and let it cool slightly before slicing

Garnish with fresh thyme leaves

Serve warm or at room temperature
