Chicken in White Wine with Lemon Potatoes
Ingredients:
- 4 chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup white wine
- 1 cup chicken broth
- 1 lemon, sliced
- 1 pound potatoes, diced
- 2 tablespoons butter
- 1 tablespoon chopped fresh parsley
Instructions:
Add salt and pepper to the chicken breasts
Warm up the olive oil in a big pan over medium-high heat
After you add the chicken breasts, cook for about 5 minutes on each side until both sides are browned
Take it out of the pan and set it aside
Put minced garlic in the same pan and cook for one minute
Use white wine to clean out the pan and scrape up any browned bits on the bottom
Put lemon slices, chicken broth, and diced potatoes in the pan
Bring the chicken breasts back to the pan and place them in the middle of the potatoes
For 20 to 25 minutes, or until the potatoes are soft and the chicken is cooked through, cover and simmer
Add the butter and chopped parsley and mix them in until the butter melts and the sauce is well mixed
Put chicken and potatoes on a plate and drizzle sauce over them
