Paleo Pear and Cinnamon Muffins
These Paleo Pear and Cinnamon Muffins are a healthy and flavorful treat for those following a paleo diet. The combination of ripe pears and warm cinnamon creates a cozy and satisfying snack or breakfast option.
Ingredients:
- 2 ripe pears, peeled, cored, and diced
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup honey or maple syrup
- 2 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3 large eggs
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
Instructions:
Warm your oven up to 350 F 175C and put paper liners in a muffin tin
Put almond flour, coconut flour, ground cinnamon, baking soda, and salt in a large bowl
Melt the coconut oil and add the eggs to a different bowl
Use a whisk to mix the ingredients together
Add the dry ingredients to the wet ones and mix them together until everything is well mixed
Add the diced pears slowly to the muffin batter
Fill up all of the muffin cups in the tin with batter
If you stick a toothpick into the middle of a muffin, it should come out clean after 20 to 25 minutes in a hot oven
First, let the muffins cool in the pan for a few minutes
Then, move them to a wire rack to cool completely
