Super Green Kale Quinoa Salad

This Super Green Kale Quinoa Salad is a tasty and healthy way to eat a lot of different superfoods. It is a great choice for a healthy meal or side dish because it is full of quinoa, kale, and a variety of fresh vegetables.

Ingredients:

  • 1 cup quinoa, rinsed and drained
  • 2 cups water
  • 4 cups kale leaves, stems removed and chopped
  • 1 cup broccoli florets, steamed
  • 1 cup cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup almonds, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions:

In a medium saucepan, bring the water to a boil

Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all water is absorbed

Remove from heat and let it cool

In a large salad bowl, massage the chopped kale leaves with olive oil for a few minutes until they become tender and vibrant green

In a small bowl, whisk together lemon juice, honey, salt, and pepper to make the dressing

Add the cooked quinoa, steamed broccoli, diced cucumber, cherry tomatoes, red onion, and feta cheese to the bowl with the kale

Drizzle the dressing over the salad and toss everything together until well combined

Top the salad with sliced almonds for some crunch

Serve immediately, or refrigerate for a few hours before serving to allow flavors to meld
