Double Chocolate Zucchini Muffins
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/3 cup vegetable oil
- 2 large eggs
- 2 tsp vanilla extract
- 1 1/2 cups grated zucchini about 1 medium zucchini
- 1/2 cup chocolate chips
- 1/2 cup chopped nuts optional
- Cooking spray or muffin liners
Instructions:
Preheat the oven to 350 degrees Fahrenheit 175 degrees Celsius and line a muffin tin with muffin liners or cooking spray
Mix the flour, baking powder, baking soda, cocoa powder, and salt in a bowl
Mix the eggs, brown sugar, vegetable oil, granulated sugar, and vanilla extract thoroughly in a different bowl
When adding the grated zucchini to the wet mixture, make sure to stir it in evenly
Mixing until just combined, gradually add the dry ingredients to the wet ones
Take care not to overmix; some lumps are acceptable
If using, mix in the chopped nuts and chocolate chips
Pour the batter into each muffin tin, filling it to about two thirds of the way
When a toothpick is inserted into the center of a muffin, it should come out clean or with a few moist crumbs attached after 18 to 20 minutes of baking in a preheated oven
After taking the muffins out of the oven, let them cool in the pan for five minutes before moving them to a wire rack to finish cooling
