Soft Moist Pumpkin Donuts
Ingredients:
- 1 cup canned pumpkin puree
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 1/2 cup milk
- Optional: Powdered sugar for dusting
Instructions:
Set the oven temperature to 175C 350F
Use butter or cooking spray to grease a donut pan
Pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract should all be thoroughly mixed together in a large mixing bowl
Sift the all-purpose flour, baking soda, baking powder, salt, and all the spices ginger, cloves, nutmeg, and cinnamon into a different bowl
Add the dry ingredients to the wet ingredients gradually, beginning and ending with the dry mixture and alternating with the milk
Blend until barely combined
Avoid over-mixing
Pour the batter into each of the donut pans cavities, filling them about two thirds of the way
When a toothpick is inserted into a donut, it should come out clean after baking for 12 to 15 minutes in a preheated oven
The donuts should be taken out of the oven and given a few minutes to cool in the pan before being transferred to a wire rack to finish cooling
If youd like, you can dust the cooled donuts with powdered sugar
