Savory Avocado Scones

Scone made with mashed avocados, fresh cilantro, and scallions are gluten-free and full of flavor. Its great for a quick breakfast or snack

Ingredients:

  • 2 ripe avocados, mashed
  • 2 cups gluten-free all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold unsalted butter, cubed
  • 1/2 cup dairy-free milk
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped scallions
  • 1 tablespoon lime juice
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions:

Get the oven ready by heating it up to 400F 200C

Mix gluten-free flour, baking powder, salt, and mashed avocados in a large bowl

Add cold butter and mix until the mixture looks like big crumbs

Add the black pepper, lime juice, cilantro, scallions, dairy-free milk, and mix just until everything is combined

Spread the dough out on a lightly floured surface and knead it a few times

Make a circle out of the dough that is about an inch thick

Cut the dough into 8 wedges with a sharp knife

Put the scones on a baking sheet that has parchment paper on it

For 15 to 18 minutes, or until just barely golden

Enjoy while still warm
