Black Pepper Stir Fried Noodles with Tofu
Ingredients:
- 8 oz 225g tofu, cubed
- 8 oz 225g rice noodles
- 2 tablespoons vegetable oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 2 teaspoons black peppercorns, crushed
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 1/2 cup 120ml vegetable broth
- Green onions, for garnish
- Fresh cilantro, for garnish
Instructions:
Cook rice noodles according to package instructions, then drain and set aside
Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat
Add the cubed tofu and stir-fry until golden brown
Remove tofu from the wok and set aside
In the same wok, add the remaining tablespoon of vegetable oil
Add the minced garlic and sliced onion, and stir-fry for 2-3 minutes until fragrant and slightly caramelized
Add the sliced red and yellow bell peppers to the wok and continue to stir-fry for another 2-3 minutes until they begin to soften
Return the cooked tofu to the wok and add the crushed black peppercorns
Stir-fry for an additional 2 minutes
In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, and sugar
Pour this sauce over the tofu and vegetable mixture
Add the cooked rice noodles to the wok and toss everything together, ensuring the sauce coats the noodles and vegetables evenly
Pour in the vegetable broth to create a flavorful sauce, and stir-fry for an additional 2-3 minutes until everything is well heated through
Garnish the black pepper stir-fried noodles with chopped green onions and fresh cilantro
Serve hot and enjoy
