Skillet Chicken Lasagna

This skillet chicken lasagna is a quick and easy twist on the classic dish, perfect for a weeknight dinner. Using ground chicken and broken lasagna noodles cuts down on prep time and makes for a hearty one-pan meal.

Ingredients:

  • 1 lb ground chicken
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 24 oz jar marinara sauce
  • 8 lasagna noodles, broken into pieces
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves, for garnish optional

Instructions:

Over medium-low heat, break up the ground chicken into crumbles as it cooks in a large skillet

Cook until it is browned and fully cooked

When the chicken is done, add the chopped onion and minced garlic to the pan

After two to three minutes, the onion should be soft

Add salt, black pepper, dried oregano, and dried basil

Put broken lasagna noodles and marinara sauce in the pan

Mix things together well

Bring everything together to a simmer

Cover and cook for about 15 minutes, stirring every now and then, until the noodles are soft

Shred mozzarella and Parmesan cheese and sprinkle it on top of the noodles when they are soft

Put the lid on top of the pan and wait a few minutes for the cheese to melt and bubble

If you want, add fresh basil leaves as a garnish before serving
