Baked Blueberry Oatmeal Cupcakes

These baked blueberry oatmeal cupcakes are a healthy treat because they have oats, fresh blueberries, and a touch of maple syrup sweetness. They are great for breakfast or as a snack.

Ingredients:

  • 1 cup rolled oats
  • 1/2 cup milk
  • 1/4 cup maple syrup
  • 1/4 cup Greek yogurt
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup fresh blueberries
  • 2 tablespoons oats for topping

Instructions:

Warm up your oven to 350F 175C and put cupcake liners in a muffin tin

Put rolled oats and milk in a bowl and mix them together

Let the oats get soft by leaving it alone for 10 minutes

Add the egg, vanilla extract, baking powder, salt, maple syrup, and Greek yogurt to the oats after they have been soaked

Combine well

Mix the fresh blueberries into the batter very slowly

Put the same amount of batter in each cupcake liner

Add two tablespoons of oats to the top of each cupcake for a nice texture

Bake in an oven that has already been heated for 20 to 25 minutes, or until a toothpick stuck in the middle of a cupcake comes out clean

For a few minutes, let the cupcakes cool in the muffin tin

Then, move them to a wire rack to cool completely
