Beef Stroganoff Soup
A hearty and comforting soup version of the classic Beef Stroganoff dish, packed with tender beef, savory mushrooms, and a creamy broth.
Ingredients:
- 1 lb beef sirloin, thinly sliced
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 4 cups beef broth
- 1 cup sour cream
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
- Chopped parsley, for garnish
Instructions:
In a large pot, heat olive oil over medium heat
Add sliced beef sirloin and cook until browned
Remove from pot and set aside
In the same pot, add diced onion and minced garlic
Saut until softened
Add sliced mushrooms and cook until they release their moisture
Return the beef to the pot
Stir in beef broth and bring to a simmer
In a small bowl, whisk together sour cream and flour until smooth
Stir into the soup
Simmer for 10-15 minutes until the soup thickens slightly
Season with salt and pepper to taste
Serve hot, garnished with chopped parsley
