Massaged Kale Salad
For a quick and healthy meal, this Massaged Kale Salad is healthy and tastes great. When you rub the zesty dressing into the kale leaves, it softens them up and makes them easier to eat. Adding Parmesan cheese, pine nuts, dried cranberries, and cherry tomatoes to the salad gives it a lot of different tastes and textures.
Ingredients:
- 1 bunch of fresh kale leaves, stems removed and chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 1/4 cup toasted pine nuts
- 1/4 cup dried cranberries
- 1/4 cup cherry tomatoes, halved
Instructions:
Wash and chop the kale leaves, removing the tough stems
In a large bowl, combine the olive oil, lemon juice, minced garlic, and grated Parmesan cheese
Mix well to create the dressing
Add the chopped kale to the bowl with the dressing
Using your hands, gently massage the kale leaves for about 2-3 minutes until they become tender and start to wilt
Season the salad with salt and pepper to taste, and toss to combine
Sprinkle the toasted pine nuts, dried cranberries, and cherry tomato halves over the massaged kale
Serve the salad immediately, or refrigerate it for a few hours before serving to allow the flavors to meld
