Crock Pot Tortilla Soup

This tortilla soup is delicious and easy to make. It cooks perfectly in a Crock Pot slow cooker. This soup is full of tasty ingredients and is a hearty, comforting meal that can be served any time.

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cooked and shredded
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz diced tomatoes, undrained
  • 1 can 15 oz corn kernels, drained
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can 4 oz diced green chilies
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 4 cups chicken broth
  • Salt and pepper to taste
  • Tortilla chips, shredded cheese, and fresh cilantro for garnish

Instructions:

Shred the chicken and put it in the slow cooker with black beans, corn, onion, bell pepper, garlic, cumin, chili powder, paprika, and cayenne pepper

Add the chicken broth and mix it in

Add pepper and salt to taste

Put the lid on top and cook on low for 6 to 8 hours or high for 3 to 4 hours

Add crushed tortilla chips, shredded cheese, and fresh cilantro on top while the food is still hot
